In Food Demo this week we made a delicious salad with beans from the Community Farm. This is a great recipe for these hot summer days because you don't need to turn the stove on. Pick up some string beans from the market and try out this refreshing and nutritious recipe at home!
Makes: 8 servings
Salad Ingredients:
2 cups fresh green, yellow or purple string beans OR 1 x 284 ml can cut green beans, drained
1 x 540 ml can kidney beans, drained well
1 x 540 ml can chickpeas, drained well
1 cup celery, diced
1 bell pepper, diced
1 small red or white onion, diced small
1 small carrot, grated (optional)
Dressing Ingredients:
¾ cup white OR cider vinegar
¼ cup vegetable oil
2 to 3 Tablespoons white sugar
½ teaspoon salt
¼ teaspoon pepper
1 teaspoon garlic powder OR 2 garlic cloves, minced
1 Tablespoon dried dill OR ¼ cup fresh dill OR other herb
Directions:
1. Prepare fresh string beans: trim stem end from the beans and cut them roughly into 1 inch pieces. Place beans in a bowl and add a couple of Tablespoons of water and cover. Microwave on high until tender about 4 minutes, drain, and put aside.
2. Prepare dressing: Place all dressing ingredients in a jar, cover and shake well, ensuring all sugar has dissolved. Taste and adjust seasoning.
3. Place all salad ingredients into a large bowl
4. Pour dressing over salad ingredients and toss well. Taste again and adjust seasoning if needed! Store in fridge for up to a week. This salad tastes better the longer it sits.
