From The North Grove Kitchen: Cranberry Orange White Chocolate Cookies

These delicious cookies were shared at our Giving Tuesday Coffee House. Now, we are delighted to share the recipe with you!


Give the gift of home-baked cookies to those close to you - or enjoy them yourself!



Makes: 24 cookies


Ingredients

  • 3/4 cup unsalted butter

  • 3/4 cup packed light brown sugar

  • 1/3 cup granulated sugar

  • 1 large egg, room temperature

  • 1 tbsp fresh orange juice

  • 2 cups all-purpose flour

  • 1 tbsp cornstarch

  • 1 tsp baking soda

  • 1/2 tsp fine salt

  • 1 cup dried cranberries

  • 3/4 cup white chocolate chips

  • 2 tbsp orange zest



Instructions

1. Preheat oven to 350°F. Line 2 cookie sheets with parchment.  


2. Cream together ¾ cup butter, ¾ cup brown sugar, & ⅓ cup sugar (2 mins). Mix in 1 egg & 1 tbsp orange juice.  


3. Sift or whisk together 2 cups flour, 1 tbsp cornstarch, 1 tsp baking soda, & ½ tsp salt. Mix into wet ingredients.  


4. Stir in 1 cup dried cranberries, ¾ cup white chocolate chips, & 2 tbsp orange zest.  


5. Scoop 1½ tbsp dough balls, 2 inches apart, onto cookie sheets.  


6. Bake for 11 to 13 minutes until edges are lightly browned. Cool on cookie sheets.  


7. Optional: Add extra chips, cranberries, & orange zest to tops of cookies while warm. Store in an airtight container at room temp up to 1 week.
