From The North Grove Kitchen: Blender Black Bean Brownies

Makes: 12 brownies

Ready in: 30-35 minutes


This recipe is a favourite with our Child Development team! It's easy and affordable to make and it's a good way to sneak some healthy protein into your kids' dessert!

Ingredients:

  • 1 can black beans, drained and rinsed

  • 3 eggs

  • 3 tbsp. vegetable oil

  • 1/4 cup cocoa powder

  • 1/4 tsp. salt

  • 1/2 tsp baking powder

  • 1 tsp. vanilla extract (or maple syrup)

  • 3/4 cup sugar

  • 1/2 cup chocolate chips (optional)

Instructions:

  1. Preheat oven to 350 degrees F. Lightly grease an 8x8" baking dish.

  2. Combine all ingredients except chocolate chips in a blender. Blend until smooth.

  3. Pour the mixture into the prepared dish. Sprinkle the chocolate chips, if using, over the top of the mixture.

  4. Bake for about 20-25 minutes, or until the top is dry and the edges start to pull away from the sides of the dish. Insert a toothpick near the centre - it is cooked when the toothpick comes out clean.

  5. Cool on a wire rack, cut into bars and enjoy!
